250g (2 teacups) Jotis All Purpose Flour
1 1/2 egg
20g Jotis Fresh Yeast
40g (1/4 teacup) olive oil
6.5g (1/2 tbsp) Sweet & Balance Tabletop Sweetener
50g (1/2 teacup) 1.5% fat milk
Grated peel of half and orange
Pre-heat the oven to 170°C Gently warm the milk, mastic, peel and machleb to 40°C. Put the egg, Jotis Fresh Yeast, Jotis All Purpose Flour, olive oil, Sweet & Balance Tabletop Sweetener, and milk and spices into a mixer. Knead until the dough forms a ball that does not stick to the sides. Leave in a warm place to rise for 35 minutes or until doubled in size. Divide into 3 equal parts and shape into strands. Make into a plait and put the “tsoureki” into a loaf tin. Leave it in a warm place to rise until doubled in size and brush with egg. Bake for 35-40 mins at 160-170°C. As soon as you take it out of the oven, wrap in a towel or clingfilm, until it cools.
