EQUIVALENTS: 3/4 STARCH EQUIVALENT & 1 FAT EQUIVALENT

INGREDIENTS

250 g sugar-free biscuits, broken up in pieces
1 packet Sweet & Balance Vanilla Flavoured Ice Cream Mix
400 ml (2 cups) semi-skimmed milk, 1.5% fat
200 g low-fat cream cheese
20 ml (2 tablespoons) lemon juice
Zest of 3 lemons
2 g Sweet & Balance Tabletop Sweetener

PREPARATION
Prepare the Sweet & Balance Vanilla Ice Cream Mix, according to the instructions on the box, using milk. In a large bowl, add the cheese, lemon zest, lemon juice and Sweet & Balance Tabletop Sweetener and whisk, until smooth. Add it to the ice cream mixture. Continue beating the ice cream in the mixer, for 1 more minute. Add the biscuit pieces to the ice cream and stir gently with a spoon. Pour the ice cream into a bowl and place in the freezer, until solid.
