250 g (1 ¼ cup) vegetable oil
150 g (3/4 cup) coconut milk
50 g (1/4 cup) lime juice
20 g lime zest
20 g (1 cup) Sweet & Balance Tabletop Sweetener
3 g (1/2 teaspoon) baking soda
6 g (1 teaspoon) JOTIS Baking Powder
550 g (4 ¼ cups) JOTIS All Purpose Flour
50 ml (1/4 cup) water
Place all the ingredients in the mixer bowl and beat with the flat beater, until the dough is smooth. Line a baking pan with parchment paper. Using a piping bag, shape around 48 cookies on the pan. Alternatively, shape the dough in small balls, using a tablespoon, and then press down each ball with a fork, making it round.
Bake in a preheated oven at 200°C, for 30 minutes*.
