1 box Sweet & Balance Mille Feuille Mix
250 ml (1¼ teacups) lemon juice • 550 ml (2¾ teacups) milk 0% or 1.5% fat
5 g. (5 tablespoons) Sweet & Balance Tabletop Sweetener Granulated
1 sprig of fresh thyme
250 g. cream
Bring the lemon juice and the JOTIS Sweet & Balance Tabletop Sweetener Granulated to the boil in a saucepan. When it comes to the boil remove it from the heat, add the thyme, cover the saucepan and leave it for a while for the juice to soak up the flavour. Make the tin for the Mille feuille following the instructions on the box and place the 2 sheets of Mille feuille. When the lemon juice has cooled down, add it to the mixer along with the contents of the sachets of Mille feuille Creme Patissiere and beat them together, adding the milk gradually. Beat the cream in the mixer for a few minutes until it stands, add 200 grams to the mixer with the Mille feuille cream and continue to beat for a little. Spread half of the cream onto the Mille feuille sheets, cover with the 2 sheets, spread the rest of the cream and cover again with the other 2 sheets. Finally, spread the rest of the vegetable-based cream on the surface and, if you want, garnish with lemon zest.
