Cupcakes

Portions: 16 portions:     Size of portion: 55 grams

EQUIVALENTS 1 STARCH, 1 FAT AND 1 VEGETABLE

INGREDIENTS

1 packet of Sweet and Balance Cake Mix
100g (1/2 tub) of 2% fat yoghurt
50g (1/2 teacup ) dried Cranberries without sugar
100 g (5 tablespoons) Sweet and Balance Strawberry Jam
3 limes
1 clove of fresh vanilla
90 ml (½ teacup) olive oil
3 eggs
90 ml (½ teacup) semi skimmed milk, 1.5% fat

PREPARATION

Prepare the Sweet and Balance Cake Mix according to the instructions on the packet. Add the lemon zest and juice, the yoghurt, the vanilla and mix lightly. Then add the finely chopped cranberries. Empty half the mixture into a round springform 24-26cm diameter cake tin, spread with half of the Sweet and Balance Strawberry Jam and cover with the remaining mixture.Bake in a pre-heated oven for 50 minutes. Leave to cool and spread the remaining Sweet and Balance Strawberry Jam on top.
