EQUIVALENTS: 1 EQUIVALENT SERVING OF STARCH, 1 EQUIVALENT SERVING OF FAT AND ½ EQUIVALENT SERVING OF FRUIT
INGREDIENTS
1 packet Sweet & Balance Cake Mix
1 packet Sweet & Balance Mix for Creme Pattisiere vanilla flavour
90 ml (1/2 teacup) olive oil
3 eggs
200 g. fresh light cream cheese
300 ml (1 ½ teacups) of sugar-free orange juice
100 ml (½ teacup) milk
50 g. Grated Sweet & Balance Βitter Chocolate
PREPARATION
Prepare the Cake Mix following the instructions on the packet but using orange juice instead of water. Share the mix between 20 individual cupcake cases. Cook the cupcakes for approximately 30 minutes and leave to cool. Use the mixer to beat the Sweet & Balance Mix for Creme Pattisiere vanilla flavour with the remaining orange juice and the milk. Then add the fresh cream cheese and beat for a short while more. Pipe the cream onto the top of the cupcakes. If necessary, cut the tops of the cupcakes a little so that they are flat. Garnish with a little grated chocolate.
Sweet & Balance Mix for Creme Pattisiere vanilla flavour is prepared with milk or alternatively, for those who wish, using one of Fytro plant based drinks (https://fytro.com.gr/fytro-product-catego/rofimata-products/), in the same quantities as milk.
